Snow day lunch.....

Chicken and Bean Burritos

1 large boneless chicken breast

1 can beans(pink, red or bleak) 

1/4 C. Salsa

1/2 Tbsp. Chili powder

1/4 C. Guacam

1/4 C. sour cream

1/4 C. grated cheese (cheddar, Monterey Jack or Mexican blend) 

1 C. rice (white, brown or Spanish yellow) 

4 large flour tortillas

2 Tbsp. olive oil


Dice chicken. Heat oil in skillet. When hot, add chicken, salsa and chili powder. Once chicken is cooked, add drained and rinsed beans. Warm tortillas and rice in oven. Place one tortilla on plate. Spread sour cream and guacamole down center and then sprinkle with cheese cover with rice and then chicken and beans. Fold one end of tortilla inand then fold the other two sides to meet. Serve warm.  Makes 4 burritos.
