Heaven on a plate

Due to my fold intolerances I have had to give up certain foods. Last week my mother asked me the foods I missed. One was bagel and cream cheese with or without smoked salmon. Her reply, "You're a good Jewish girl." See bagels are out because of yeast (even gluten free ones) and cream cheese, well that's cows milk. Today, I discovered heaven for this Jewish girl in the form of veggie tofu cream cheese on a brown rice cake with smoked salmon. My Yom Kippur Breakfast is saved. Thank the lord!

(P.S. My first attempt at gluten free alternative dairy homemade mac n' cheese was so-so.)
